Chefs Steve Benjamin and Frederic Castan discuss Escoffier’s lasting influence on modern cuisine between courses of a five-course menu inspired by his work.French violinist Ambroise Aubrun curates chamber music from the Belle Époque, with works by Hahn, Debussy, Fauré, and Duparc accompanying the meal.
